Chapter I

Roots in the Hudson Valley

Maison Ember began as a series of nomadic dinners across the Hudson Valley. Chef Julian Thorne sought to bridge the gap between the untamed wild and the refined plate.

Inspired by the brutalist architecture of New York and the sprawling organic farms of the upstate, Julian envisioned a space where fire-cooked cuisine could be elevated to an art form. Every piece of wood in our dining room was reclaimed from the same barn where Julian served his first twenty guests.

Chapter II

The Sacred
Hearth

Our 12-foot custom-built hearth is the heart of the restaurant. No gas, no shortcuts. We utilize white oak, cherry wood, and charcoal to create layers of flavor that can't be replicated in a modern oven.
